It’s been 8 (!) years since we first met Camille Becerra, and in the interim, life has swung in all directions for the New York chef & restaurateur. Alongside her partnership in As You Are, the all-day cafe inside Downtown Brooklyn’s Ace Hotel, this summer Camille released her first cookbook, Bright Cooking, an ode to the vibrancy of taste in all its forms. 

 

Between a season of travels, book releases, and cooking, we caught up with Camille for a debrief and conversation, exploring how the possibilities of flavor give way to creative expression and soulful nourishment.

What is the idea behind Bright Cooking?
The book stems from my career as a restaurant cook and chef. I would often get asked how I develop a dish—i.e., if I just threw something on the wall to see what sticks. This is a way of sharing notes on my process: The first part, “Elements,” includes all my favorite sauces, broths, flavor pastes, and flourishes. The second part is a referential guide to how I incorporate these elements into dishes. Overall, the book's mission is to have a reader determine their own craving or to assess what ingredients they have on hand…and then develop an approach on making it their own.  

 

What makes a dish “vibrant”? 
The book—and the way I approach this way of cooking—is based on thinking about what we eat, about the tools that enable us to freestyle. To have access to that makes it all personal, exciting, and freeing.   

I believe creating dishes that come from this place can change everything, and that this nourishing mode of eating and cooking is the best form of health and wellness. It all starts with food. 

 

What is your surefire, no time, go-to meal?
First step: ask myself what do I crave? I usually am a "fast" cooker opposed to a long braise or roasted, "slow" bake. No matter what, I tend to go for something bright & savory contrasted with a bit of a crunch.

What’s on your go-to dinner party menu for summer? 
Summer outdoor cooking is life's greatest pleasures. I think committing to a paella pan is something anyone can get behind…there's so much you can do with it, whether sauteing or using as a flat grill (think: toast with olive oil.) 

There’s nothing better than paella in the summer, although it can be intimidating if you’re new…but you’re only a beginner once, so take the risk! Tips: balance your pan by pouring water in it first to see the actual slope before you cook in it…and be patient and research the right measurements. 

 

What’s a new flavor pairing or unexpected combination of ingredients that you’re obsessed with right now? 
Tamarind and tomato.
 

In what places/ways do you find or reclaim vibrance and brightness in your own life? 
Travel. Friendships. And always having constant human interactions with all walks of life. 
 

What habits keep you feeling creative and fresh? 
Weekly bike rides to the Union Square farmers’ market

Do you have a working or updated definition of play, as it relates to your life right now?
Yes, starting with recognizing that play and rest are not the same. I allow myself to lounge solo. My career is very social and so is NYC; I love interaction but an aspect of it can be draining. I live by the ritual of: work, play, rest, and repeat. 

 

How are you currently relating to your own sense of self? 
The sense of self is understanding what makes you feel the best. For me it's taking care of my mind and body.

 

What new-to-you revelations of late have felt most moving?
The yearn for outdoor space to grow and sun in. Nature is power.
